Ready to elevate your usual roasted sweet potato? You’ve GOT to try this pistachio lime vinaigrette with it – it’s truly amazing paired together. Ingredients:
- 4 large sweet potatoes, sliced to 1-inch wedges
- 1 tbsp olive oil + 1/2 tsp each salt and pepper to taste
- 1/4 cup roasted pistachios, chopped (plus 2 tbsp extra for garnish)
- 3 tbsp extra virgin olive oil
- 1 fresh lime, juiced
- 1 tsp maple syrup
- 2 jalapeños, diced
- 1 tsp garlic powder (or 1 fresh garlic clove, minced)
- salt + pepper to toaste
- chopped fresh cilantro, for garnish
Instructions:
- Pre-heat the oven to 425F.
- Toss sweet potatoes with olive oil, salt, and pepper.
- Roast for 30 minutes until crispy, flipping halfway through at the 15-minute mark. At the end of the 30-minute mark, broil on high for an extra 3 minutes to make the potatoes extra crispy.
- Meanwhile, whisk together extra virgin olive oil, lime juices, jalapeños, garlic powder, salt, and pepper until smooth. Stir in 1/4 cup of pistachios.
- Plate the sweet potatoes and add vinaigrette on top.
- Garnish with extra pistachios and fresh cilantro as desired.
