Pizza for breakfast? Say no more. I love that this smoked salmon breakfast pizza is like the pizza version of everyone’s favorite smoked salmon / lox bagel. It’s versatile enough that you can swap in different ingredients based on everyone’s dietary needs (for example, use a gluten-free crust for someone with celiac’s or swap pita instead) and you can either make for yourself or serve for a crowd. This looks super intricate but truly, it takes less time than you think. I love smoked salmon as a quick source of protein – no extra cooking needed and it adds so much flavor to everything you are making.
Ingredients:
- 1 prepared pizza crust of your choice
- 4 ounces smoked salmon
- 1/2 avocado, sliced
- 1/4 cup microgreens
- 2 mini cucumbers, chopped
- 1/4 cup thinly sliced red onion
- 1/4 cup plain greek yogurt + 2 tbsp cream cheese (or whipped cream cheese) of choice
- 2 tbsp chopped fresh dill
Instructions:
- Pre-heat oven and prepare pizza crust according to the specific instructions. Remove from oven and set aside, allowing the crust to cool down.
- In a medium bowl, whisk together the cream cheese and greek yogurt until smooth.
- Spread the yogurt/cream cheese mixture evenly on top of the cooled crust. Top with smoked salmon, cucumbers, avocado slices, red onion, and fresh dill.
- Sprinkle with fresh ground black pepper. Slice and serve immediately.
