I’m a big advocate for having Quaker oats in the pantry because it’s a versatile ingredient that you can easily access, no matter where you are. Per every ½ cup serving of uncooked oats, you’re also getting vitamins and minerals like vitamin B1, magnesium, phosphorus, and manganese.
If you’re in need of a crunchy granola recipe with minimal ingredients that you can make in less than 10 minutes – then you need to meet the skillet granola! Five minutes of your time on the stove and you get a house that smells like heaven and delicious granola for the week. Making your own granolas can definitely be this easy. Plus, oats are naturally low in fat and sodium and this entire recipe is sweetened with 3 tbsp of maple syrup.
Cranberry Coconut Skillet Granola
Yields = 3 cups granola (12 [¼-cup] servings)
INGREDIENTS
- 2 cups Quaker Old-Fashioned Oats
- 3 tbsp maple syrup
- 2 tbsp olive oil
- ½ cup coconut flakes
- ¼ cup dried cranberries
- ½ tsp cinnamon + pinch of flaky sea salt
INSTRUCTIONS
- Place a large skillet over medium heat. Add the coconut oil and maple syrup and stir to warm it up.
- When you see bubbles forming, add Quaker rolled oats, coconut flakes, cinnamon, and salt.
- Continue to stir the mixture until it becomes golden-brown, around 5 minutes.
- Remove from heat and stir in cranberries. Allow granola to cool completely. Granola will crisp up as it cools.
- Serve immediately or store in an air-tight container.
