Maple Sea Salt Baked Oatmeal with Grapefruit
(serves 5)
Ingredients:
- 5 cups Quaker Old-Fashioned oats
- 1/2 cup unsweetened almond milk
- ½ cup peanut butter
- ¼ cup maple syrup
- ¼ cup chia seeds
- 1 large egg
- 2 tbsp sliced almonds
- ½ tsp baking powder
- ½ tsp cinnamon
- 1 large grapefruit, peeled and sliced
- 1 tbsp chopped rosemary
- ½ tsp flaky sea salt
Directions:
- Preheat the oven to 350F.
- In a medium bowl, combine rolled oats, milk, peanut butter, maple syrup, chia seeds, eggs, baking powder, and cinnamon.
- Pour into a baking dish. Bake for 30 minutes.
- Add sliced grapefruit and almonds on top. Place back into the oven and bake for an additional 5-10 minutes or until center is set.
- Top with chopped rosemary and flaky sea salt. Add additional maple syrup as desired.
- Cool for 5 minutes before slicing to serve.
- Refrigerate for up to 3 days.
