This fresh spicy taco salad paired with a honey chipotle salmon checks off all of the criteria above – plus, a fresh salmon salad like this makes an excellent meal idea to serve if you’re ever hosting a dinner al fresco for the warmer weather we’re having!
This is essentially “an everything in the kitchen sink salad” since all you have to do is chop up your veggies and toss together. Salads like this are the perfect solution when you need to throw together lunch or dinner in a hurry because you can use up any veggies you have on hand and pair it with a protein to make a balanced meal.
I used this Honey Chipotle Salmon from Sea Cuisine as my protein in this salad and thought the flavors would go great with a fresh, taco inspired salad. Think crunchy romaine, black beans, corn, tomatoes, and avocado – with a 2-ingredient lime dressing!
I love that not only is the fish from Sea Cuisine responsibly sourced, but there’s a variety of flavor options to fit your cravings. Salmon in particular is a great source of omega-3 fatty acids, which can help support brain function and healthier skin. Plus, this is a great freezer staple to have on hand as a protein source because you can bake straight from frozen – no thawing required! The fish comes out tender and flaky in 20 minutes. I also see this as an excellent option for meal prep – just add your switch up with your favorite mix of veggies and you’ll have meal options for the week.

Picking up frozen, pre-seasoned fish like this can help you look forward to cooking something healthy without all the extra time or work in the kitchen. I always recommend stocking up on frozen proteins + veggies because you can keep them fresh in the freezer for longer and they’re usually prepped and chopped beforehand. Honey Chipotle Salmon with Spicy Taco Salad
(serves 2)
INGREDIENTS
- 2 pieces Sea Cuisine Honey Chipotle Salmon
- 1 large head of romaine lettuce, chopped
- ½ cup cherry tomatoes
- ½ small onion, diced
- ½ cup corn (drained from can or thawed from frozen)
- ½ cup black beans, drained from can
- 2 jalapenos, sliced
- ½ avocado, sliced
- ¼ cup cheese of choice (recommended: queso fresco)
- 2 limes, juiced
- ¼ cup fresh cilantro, chopped
- 3 tbsp extra virgin olive oil
- 1 tsp each salt + black pepper
INSTRUCTIONS:
- Pre-heat oven to 400F. Place salmon fillets on a parchment lined baking sheet and bake for 16-20 minutes, or until a minimum temperature of 165F.
- While the fish is baking, gather all ingredients for the salad and combine in a large mixing bowl.
- To make the dressing, combine olive oil, lime juice, salt, and black pepper. Whisk until smooth and add to the rest of the salad ingredients. Toss until all ingredients are combined.
- After the salmon is done, serve immediately with salad.
