Ingredients
- 1 lb boneless/skinless chicken tenders
- 1 egg + 1 egg white
- 1/2 cup almond meal (look for finely ground!)
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp garlic powder
- 1/3 cup buffalo sauce
Instructions
- Preheat oven to 400F.
- In a large bowl, combine almond flour and spices.
- In a separate bowl, whisk egg + egg white
- Dip each chicken tender into the egg, then into the flour mixture until fully coated.
- Place chicken tenders in a pre-lined baking sheet with parchment paper and repeat until finished. (tip - use one hand to dip the egg, then the other to coat the flour to avoid clumping the flour!)
- Bake in the oven for 15 minutes, then flip.
- Bake for an additional 10-12 minutes, or until golden brown.
- Remove from oven and toss in a buffalo sauce (pour in a separate bowl to toss so it's even!) before serving.
