I’ve probably written enough about chia seeds on here that makes you run the other direction, but you may just change your mind after this one.
Cause this one tastes like pie.
And come on, no matter how much of a health nut we are, you have to admit that if you could, you would totally eat pie for breakfast.
Sweet Potato Chia Pudding
(serves 1)
2 tbsp chia seeds
10-12 tbsp unsweetened almond milk
1 medium cooked sweet potato
1-2 tbsp Vega vanilla protein powder (optional)
1/2 tsp cinnamon (optional)
Add chia seeds, milk, and protein powder together. Place into fridge overnight or for at least 4 hours. In the morning, mash in sweet potato and stir in cinnamon. Add additional milk as necessary.
Sweet Potato Coconut Chia Pudding
(serves 1)
1 tbsp chia seeds
10 tbsp unsweetened coconut milk
1 large cooked sweet potato, mashed
1/2 tsp coconut extract
1/2 tsp cinnamon (optional)
1 tbsp goji berries (optional)
Add chia seeds, milk, extract, and sweet potato together. Place into fridge overnight or for at least 4 hours. In the morning, stir in cinnamon. Add additional milk as necessary.
