And so for the last day of class as an undergraduate last week, I had to celebrate the right way.
With smoked salmon. A la Trader Joe’s, of course.
If you know me at all, you would know that I am not much of a meat or poultry eater. Instead, I’m a big fan of seafood. Salmon, crab, cod, scallops – the works!I prefer my salmon wild caught and either baked, grilled or pan seared, but smoked salmon speaks to me every now and then. I couldn’t resist after passing by it at Trader Joe’s other other week! And TJ has the best prices I’ve seen on smoked salmon – I paid around $5.49 for 4 ounces.
There is something just really delicate about the flavors of avocado and salmon together that I really enjoy. Creamy, smoky and extremely satisfying! Full of heart healthy fats that are also great for your skin – I’m all about it. I paired it with a coconut flour bread I made earlier in the week, and grape tomatoes.
For the remainder of the smoked salmon, I tossed it into an omelet the next morning for breakfast and added some spinach. Broiled grapefruit on the side, of course! Smoked salmon has such strong flavor that it doesn’t need to be in anything complicated. The simplest flavors are often the best flavors!
An additional thing I love about smoked salmon? No prep needed. Which means that both of these meals took less than 10 minutes to throw together. Time is of importance as I finish up exams for the classes this week!
