If it is one food that I think I could eat everyday, it would be the avocado. (and I basically do eat it everyday!)
Full of heart healthy fats, the avocado is an excellent source of monounsaturated fatty acids that helps in the absorption of many nutrients and antioxidants – including all of the 25 essential nutrients such as Vitamin A, B, C, E and K! This superfood works wonders for your skin and digestion, since it is chock full of anti-inflammtory properties. I know many people who fear the avocado because of the fat – but good fats such as those found in this delicious fruit are important in maintaing a nutritious diet. The avocado is also chock full of fiber, which helps you stay full and satiated.
And c’mon, who doesn’t love a good hearty guacamole? In addition to guacamole, avocados can be incorporated into variety of recipes, anywhere ranging from breakfasts to desserts. I know of many people who use it as an oil replacement during baking as well.
I came across a Huffington Post article the other day that I really loved about the different ways to incorporate avocados into your smoothies —

A wonderful combination of creamy, slightly sweet, and chocolate-y taste without any added sugars or filler ingredients. This smoothie keeps me full and energized for hours to come!
